Our Olive Oil Philosophy: Olive oil has been part of Mediterranean culture for thousands of years — yet not all oils are the same. For us, one of the defining markers of quality is polyphenol content. These natural antioxidants are visible not only in analysis, but also on the palate: in freshness, fine bitterness and a clean, gently pungent finish. Our local Koroneiki variety produces olive oils that stand among the finest in the world.

The Koroneiki olive naturally stands out for its particularly high polyphenol content. To intensify this character, we deliberately harvest earlier than is customary in the region. The yield is lower, but the oil becomes greener and more concentrated in valuable compounds. Lacules is not an ordinary table oil. It is early-harvest Koroneiki in its purest form.

What is the difference between The Essence and Pure?

The Essence is our olive oil of the first hour: made during the very first days of the harvest season and bottled naturally cloudy on the same day — unfiltered and exceptionally fresh.

With fine olive particles still present in the bottle, it shows the Koroneiki olive in its most immediate form: green, intense and alive. A seasonal oil for those who want to experience the taste of the first harvest.

Pure is gently filtered after extraction. This makes it clear, stable and better suited for longer storage — while preserving the character of early-harvest Koroneiki.

In short:

The Essence is young, unfiltered and available only for a short time in limited quantity.

Pure is filtered, clear and available throughout the year — a high-polyphenol Koroneiki olive oil for kitchen and table.

Tip: To preserve the taste of fresh olive oil for longer, individual bottles can be frozen. This helps retain its green freshness.

What does "early harvest" mean?

The olives for all our olive oils are harvested while still green. At this stage, they contain a higher concentration of valuable compounds, including polyphenols, which gradually decrease the longer the olive remains on the tree.

In general, the earlier the harvest, the higher the quality of the olive oil — with greater freshness and a higher concentration of natural antioxidants.

What does "extra virgin" mean in olive oil?

Extra virgin is the highest quality category for olive oil.
It is legally defined and strictly controlled: the oil must be obtained directly from olives and solely by mechanical means, it may have a free acidity of no more than 0.8%, and it must be free from sensory defects. 

All LACULES olive oils meet this highest category.

In addition — and beyond the legal minimum — they come from certified organic farming and are naturally high in polyphenols. For us, this is a marker of early harvest, freshness, careful handling and gentle extraction.

Can olive oil be heated?

Yes.
Despite a common misconception, high-quality extra virgin olive oil is among the best oils for frying, roasting and deep-frying. Its high share of monounsaturated fatty acids and natural antioxidants makes it particularly stable under heat. In a comparative study, extra virgin olive oil was the most stable of the oils tested — even ahead of coconut oil.

Can you bake with olive oil?

Yes. High-quality olive oil is an excellent natural and vegan alternative to butter and works very well in cakes, muffins, waffles and other baked goods.

In our experience, even butter lovers often do not notice the difference. It’s worth a try.

Tip: Replace 100 g butter with 80g olive oil.

How long does olive oil keep?

Olive oil is at its best when fresh. We recommend using olive oil from the most recent harvest season and consuming it within one year. This preserves its flavour and valuable natural compounds, including polyphenols. Although the best-before date is typically 18–24 months from bottling, every olive oil gradually loses freshness, aroma and antioxidants over time. Store it cool, dark and tightly closed.

How should I store olive oil?

The basic rule is: protect it from light, air and heat. Once a bottle has been opened, a kitchen cupboard is enough to protect it from light.
Always close the bottle tightly after use.

For unopened bottles, we recommend storing the oil in a cool, dark place, such as a cellar.

Freezing is also a good option. Olive oil can be frozen in its original glass bottle, as it does not expand like water. This helps preserve freshness
and allows you to enjoy the oil closer to its harvest character at any time of year — especially recommended for our seasonal, limited THE ESSENCE.

 

Help, my olive oil has turned cloudy.

Don’t worry — this is completely normal at cooler temperatures and has no effect on quality. When cold, olive oil may become cloudy, thicken or form
small crystals. Simply leave the bottle at room temperature and it will become clear and liquid again.

Freezing is also possible in the original glass bottle and can help preserve freshness for longer.
